Executive Director of Meals on Wheels
Having met clients needs head on, either in Corporate America or the private sector, Beth brings with her a tenacity to serve. She saw firsthand what it meant to having an ill family member remain at home as long as possible. It is Meals on Wheels focus and priority to provide a hot nutritious meal to the homebound, elderly, disabled and isolated. “When we serve them where they live, lives are changed.”
Beth comes from Plymouth Indiana and moved to Florida in 2006. She married Jeff Aker in 1985 and together they have raised 3 beautiful daughters, Spencer Elizabeth, Leihana and Natalie. She devotes her time to her family, her friends and her community.

Mike is the Board President of Meals on Wheels and the owner of Fresh Country Café, committed to feeding our community. He has been on the Board of Meals on Wheels for over 8 years and loves being a part of the greater good.
Vice President Diane Rieth
Diane E. Reith, RN, BBA, MS, ACM, CPHQ, CPMS, CPCS
Director of Social Services, Florida Hospital Zephyrhills
Diane Reith, RN, BBA, MS is currently serving as the Vice President of the East Pasco Meals on Wheels organization. She is also employed by Florida Hospital Zephyrhills as the Director of Case Management. Diane is a native of Pittsburgh, PA who has been a Florida resident for the past ten years.
Diane is a Registered Nurse with over 30 years experience in the healthcare industry including professional experience in the fields of Healthcare Quality Management, Case/Utilization Management, Risk Management, Infection Control, and Medical Staff Services. Diane also served as a Senior Management Engineer in a multi-facility healthcare system.
Diane earned her Master of Science degree in Healthcare Management from the Florida Institute of Technology in Melbourne, Florida. She also holds a Bachelors of Business degree from Athens University.
She is certified by the National Board of Case Management and holds professional certifications in the areas of Healthcare Quality, Medical Staff Management, and Medical Staff Credentialing.
Diane is passionate about serving the community and meeting the needs of our senior members.
Secretary Barbara Erdmann
After retiring from the pet world where Barb worked as a groomer, she began another purpose; volunteering as a driver for Meals on Wheels. After a health scare while on her route, she now just serves as the Secretary for the Board where she has been a member for over 10 years.
Treasurer Dan Crump
Florida Hospital Zephyrhills, Treasurer and Director of Finance
While Dan splits his time as the Financial Director for both the Advent Health Zephyrhills and Advent Health Dade City (Formerly Florida Hospitals), Dan serves on the Meals on Wheels board as the Treasurer where he sees to it that the direction of Meals on Wheels is financially sound and dedicated to changing the culture of those in need of nutrition.
Vicky looks forward to volunteer work and giving back to her community. She serves as an Executive Board Member and Ambassador with the Zephyrhills Chamber of Commerce. She was voted Ambassador of the Year in 2014. Vicky also serves as a Board Member for the East Pasco Networking Group and East Pasco Meals on Wheels.
Past commandant of the Marine Corps League who spends all his time volunteering for the community and loves being on the Meals on Wheels board. He focuses on the elderly and those that have served our beloved country. Has been a board member for 3 years.
Mary Catherine Cook
Mary Catherine is an active member of several industry associations and has served as a volunteer on the Board of Directors of Citrus County Harvest for nearly 10 years, helping to create & implement a weekend meal program for students in Citrus County. She’s a graduate of the Eckerd College Leadership Institute, as well as a board member for the Zephyrhills Daybreak Rotary Club. Mary Catherine is blessed with three children & four grandchildren whom she adores and encourages them to contribute their energies and talents in their tiny spheres of the world, because she believes being a giver, not a taker, is the true meaning of success.
Teresa Dadez is a retired ER Nurse and has know Beth Aker for years when she worked at the Post Office at Saint Leo University and ran the Health Center on campus. Food uncertainty is an epidemic and embarrassment. God gives us each a gift and I hope mine is to help Meals on Wheels from the inside. We can all help by giving of our time, talent, and treasure.
A Happy Memory – Humans aren’t the only ones to wait for their meal. One man had a dog who would walk back and forth across the top of his couch, in front of a large bay window. When he saw my truck he got so excited knowing that where was always a treat for him too!
